I made this souffle last Christmas and it was a big hit. I'm normally not a fan of carrots, but this is delicious AND really easy, so I'm putting the recipe on this site so I can remember to make it this holiday season, too :)
The recipe came from the Jenks Avenue Church of Christ's "Treasured Recipes" cookbook.

1 lb. carrots, sliced
1/2 cup butter, melted
1 cup sugar
3 Tbsp. flour
1 tsp. baking powder
1 tsp. vanilla
3 eggs

Cook the carrots until tender. Drain. Add the butter and mash the mixture (use blender of processor.) Mix the sugar, flour, baking powder, vanilla and eggs. Add to the carrots and blend well. Pour into a 1 quart casserole and bake at 350 degrees for 45 minutes. Serves 4 to 6. May be doubled, but cooking time should be increased.

Yummy Chicken Chili

A great meal on a cold night! This recipe incorporates ingredients from several different chicken chili recipes that I've tried over the years. The finished product was very good--I highly recommend it! :)

1/2 stick butter
1 c. diced onion
2 Tablespoons flour
3 cans of chicken broth (regular soup-sized cans)
2 c. milk
1 1/2 teaspoon cumin
1/2 teaspoon crushed red pepper
1 teaspoon white pepper
1/2 jar salsa (regular-size jar)
2 (10 oz.) cans of chicken meat, rinsed and drained
2 cans great northern beans, undrained
1 pound of bacon, cooked and crumbled
sour cream
shredded montery jack cheese

Melt butter in large pot. Saute onion until softened. Stir in flour slowly to create a paste. Slowly stir in broth. Add milk, spices and salsa. Stir. Bring to a boil; reduce heat and simmer for 20 minutes. Add beans and chicken to pot and return to a boil. Reduce heat and simmer for another 10 minutes. Serve with sour cream, cheese and bacon.

Friday, November 7, 2008 Grilled Fish Tacos

I've subscribed to this online meal planning service called e-mealz.com, and I really like it! You choose the grocery store you shop at most and the meal service plans out your weekly meals based on the specials the grocery store is running that week. So, not only do you get new recipes but they also provide a detailed shopping list of everything you'll need to make that week's meals. The cost for this service is $1.50 per week, and I have DEFINITELY saved at least that much each week that I've used their meal plan. So, for you gals (and guys, if any guys read this blog) who cook supper and are always in the market for easy, inexpensive recipes, I highly recommend this service.

So, that being said, this Grilled Fish Tacos recipe is one that I got off the Publix Meal Plan 2 weeks ago. It was delicious, easy, and was even a hit with the guys (Will, Payton and Jamey all really liked it!). Enjoy.

Here's the recipe:

4-6 fresh tilapia fillets
salt
lemon pepper
2 t. olive oil
15 oz can mandarin oranges, drained
2 small cans crushed pineapple, drained
1 pkg flour tortillas
chopped lettuce

Season fillets on both sides with salt and lemon pepper. Heat a skillet over med-high heat. Add oil. Cook fillets for 3+ minutes on each side, turning once until browned and fish is white and flaky. Remove and cut each fillet into 2 strips.

Dressing: 1 c. mayo mixed with Tabasco sauce to taste.

Assemble soft tacos with dressing, 1-2 fish strips, topped with oranges, crushed pineapple and a mound of lettuce.

Serve with rice pilaf.
