Recipes from Charleston Home Magazine
This month's
Charleston Home Magazine had several recipes that looked yummy and easy--who can resist that combination?! Over the weekend, I tried the corn casserole and chocolate cake bar recipes and both exceeded my expectations. I hope you enjoy these as much as I did.
(Yes, I took pictures of the recipe pictures in the magazine--much easier than trying to come up with an original way to photograph the food I made) :)
Corn Casserole (serves 6-8)1 (14.75 oz.) can creamed corn
1 (15.25 oz.) can whole kernel corn, drained
1 cup sour cream or plain yogurt (I used low-fat sour cream)
1/3 cup sugar
1/2 cup vegetable oil
2 eggs
1 box Jiffy cornbread mix
Preheat oven to 350 degrees F. Lightly grease a round casserole dish. In a medium bowl, combine first six ingredients. When well-combined, add cornbread mix and stir. Pour into dish. The batter should fill the pan, leaving at least 1/2 inch at the top, as the mixture will rise in the oven. Bake for approximately one hour, or until firm in the center. If you prefer the casserole a little creamier, bake for about 50 minutes. Casserole will deflate slightly while cooling.
Chocolate Cake Bars (yields 24 bars)(for the bars)1 stick margarine, melted
1 cup sugar
4 eggs
1 (16 oz.) can Hershey's chocolate syrup
1 cup flour
1 tsp. vanilla extract
1/2 tsp. salt
(for the frosting)1/3 cup milk
3/4 cup sugar
3/4 stick butter
1/2 cup mini semi-sweet chocolate chips
Preheat oven to 375 degrees F. Grease and flour a 15.5 x 10.5 x 1" jelly-roll pan.
In a medium bowl, combine margarine and sugar. Add eggs one at ta time, mixing well after each. Stir in chocolate syrup until well-combined. Add flour, vanilla and salt and mix well.
Pour into pan and spread evenly. Bake 15-20 minutes.
To make the frosting, heat milk in a small saucepan over medium-high heat for three to five minutes, being careful not to let it scorch. Add sugar and stir until dissolved. Break butter into sections and add to mixture. Bring to a boil and cook for one minute, stirring constantly. Add chocolate chips and continue to stir until completely melted. Pour over cake. Frosting will harden as it cools.

Chewy Butterscotch Pecan Bars

I got this recipe from a "Bars 'n Brownies" cookbook that I purchased from a co-worker's daughter (school fundraiser) when we lived in Birmingham. I had never used this particular recipe before, but had the ingredients in our pantry, so I decided to try it this afternoon. The final product was delicious!
Ingredients:
2 cups biscuit baking mix (I used Bisquick Heart Smart b/c it was in the pantry)
1 cup packed brown sugar
1/2 cup butterscotch chips
1/2 cup pecans, toasted* and chopped
1/2 cup butter melted
1 egg, beaten
1 tsp. vanilla
Directions:
Combine first four ingredients in medium bowl and mix thoroughly. In a large bowl, combine butter, egg and vanilla. Add dry ingredients mixture to butter mixture. Stir until well blended. Spread batter in a greased 8-inch pan. Bake at 350 degrees for 18-22 minutes, or until bars are light golden brown. Cool completely and cut into 2-inch squares. Yields 16 bars.
*To toast pecans, spread evenly on an ungreased baking sheet. Bake at 350 degrees for 7-9 minutes. Stir halfway through baking. Pecans should be lightly browned.Labels: dessert, finger food

Kraft Fantasy Fudge

Funny story: I was cleaning out my parents' pantry last week and found some ingredients that were close to their expiration dates, so I decided to use them. Thankfully they (marshmallow creme, semi-sweet baking chocolate & pecans) were all ingredients that I could use to make Kraft Fantasy Fudge (I found the recipe on the back of the marshmallow creme jar that was in their pantry). Since I'm trying to cut back on sweets, I sent the fudge with my bro and sis-in-law to their young adults retreat, and it was a HUGE hit! I bet 10 people told me how good it was and at least that many have asked me for the recipe.
So, the point of this post is...If you've never made this fudge, try it! It's pretty easy and will make the chocolate-lover in your life very happy :)

(Side note: As previously mentioned, I found pecans in mom and dad's pantry, so I used those in the fudge instead of walnuts. I assume walnuts would be just as good.)
