Wednesday, February 11, 2009 Chopped Barbecue Chicken Salad

We love CPK's famous dish so much, that we decided to try it at home. Cheaper and healthier, and if I do say so myself...better than it was in the restaurant!

Ingredients:
1 head of lettuce, chopped
1 can black beans, drained and rinsed
approx. 1 cup frozen corn, thawed
1/2 cup jicama, chopped
fresh cilantro, to taste
fresh basil, to taste
handful of tortilla chips
1/2 c. Monterey Jack cheese, shredded
2 chicken breasts, marinated in BBQ sauce and grilled, then chopped
1-2 diced tomatoes
1-2 green onions, chopped
Ranch dressing, and BBQ sauce-- use both as the dressing
optional 1/2 lime--use to sprinkle a little juice on top for a punch of flavor. 


Just put it all together and have your own CPK salad! Yum! We will make this again. It probably feeds about 4 adults.
