Yummy Chicken Chili
A great meal on a cold night! This recipe incorporates ingredients from several different chicken chili recipes that I've tried over the years. The finished product was very good--I highly recommend it! :)
1/2 stick butter
1 c. diced onion
2 Tablespoons flour
3 cans of chicken broth (regular soup-sized cans)
2 c. milk
1 1/2 teaspoon cumin
1/2 teaspoon crushed red pepper
1 teaspoon white pepper
1/2 jar salsa (regular-size jar)
2 (10 oz.) cans of chicken meat, rinsed and drained
2 cans great northern beans, undrained
1 pound of bacon, cooked and crumbled
sour cream
shredded montery jack cheese
Melt butter in large pot. Saute onion until softened. Stir in flour slowly to create a paste. Slowly stir in broth. Add milk, spices and salsa. Stir. Bring to a boil; reduce heat and simmer for 20 minutes. Add beans and chicken to pot and return to a boil. Reduce heat and simmer for another 10 minutes. Serve with sour cream, cheese and bacon.
